Recently, I wanted to make a dessert for someone on The Virgin Diet (no soy, eggs, dairy, gluten, sugar). In the second phase of the diet, they can add a little bit of honey or agave to their diet, so I wanted to surprise him with a dessert he could eat. Here is a brownie recipe I slightly adapted from Shan Made’s blog.
Ingredients:
2/3 cup honey
1/2 cup melted coconut oil
1 tbsp. vanilla extract
1 cup applesauce
1/2 cup brown rice flour
1/2 c. cocoa powder
1/4 tsp. baking soda
1/4 tsp. sea salt
Optional: Add 1/4 cup nuts (I used walnuts)
Preheat oven to 350 degrees. Whisk together wet ingredients until smooth, then add your dry ingredients.
Pour into greased 8×8 inch pan. Bake for 20-25 minutes, or until center is done.
Raw Chocolate Frosting Ingredients (optional):
1/2 cup coconut oil, melted
1/3 cup cocoa
2/3 cup agave nectar
Whisk cocoa with melted coconut oil until smooth, slowly add agave whipping with whisk. Let sit at room temperature or in fridge to set for 10-15 minutes before frosting, to bring the coconut oil back to a thicker state. Frost brownies when they’re cool.
Absolutely delicious, and guilt free!
