Sweet Potato & Bean Burrito

 

I have a slight obsession with the gluten-free and dairy-free burritos from Amy’s Kitchen. I also recently went to Gracias Madre for another delicious dinner and had the Flautas De Camote stuffed with sweet potato. I decided I wanted to make something a little bit like each of them.

1/4 cup Rice flour
1 cup Planet Rice Quinoa and Rice Blend
1 tbs Tahini
1 1/2 tbsCumin
1 can Black Beans
1 can Pinto Beans
1-3 small Sweet potatoes
1 tsp Chili powder
1-2 cloves Garlic
Salt and Pepper
Udi’s Tortillas
Daiya Cheese

Directions:

Start by getting your rice and sweet potatoes cooking then rinse off your beans in cold water.

Next, Add  1 tbs cumin 1 tsp chili powder 1-2 cloves of garlic, 1/4 cup of Rice flour and some salt and pepper to taste.

Now just mix it all together. You want to mash it up a little bit, but not so much that it becomes a puree. A combination of whole, partial, and mashed beans is perfect!

Keep an eye con your Quinoa and when it is ready take it off the heat and set aside.

In a bowl combine your rice, sweet potatoes, tahini, 1/2 tbs cumin and some salt and pepper.

Mix it all together until the sweet potato is evenly blended with the rice.

Now you are ready to determine how you would like to serve this. Are you in the mood for a salad or a burrito?

If you chose Salad… Grab some butter lettuce and top with a little bit of the bean mixture and some of the rice mixture add some Daiya cheese and guacamole and you are good to go!

Maybe you chose a burrito? Get some Udi’s tortilla’s they are the best for burrito’s because you can actually wrap them like a flour tortilla without any rips or tears!

Toss on some of the rice and bean mixtures, then wrap them up nice and snug in the tortilla. Toss some Daiya cheese on top and put under the broiler until cheese melts and top begins to brown.

When its all done enjoy it all by itself or put on top of some lettuce with guacamole for something special.

Thats it! So delicious! I absolutely loved this and had plenty of the rice and bean mixtures left to take into work for lunch! Just make sure you use the Udi’s, unless you know of something that is just as big, easy to use and taste great. I know I haven’t found anything yet. But I’m happy to take suggestions!

Mauro Cafe

Finding new restaurants that have gluten-free options is always really exciting for me. I love checking out new places and seeing what creative gluten-free dishes actual chefs come up with. Also, as much as I love to cook, I also love not cooking! That brings me to Mauro Cafe.

Mauro Cafe is located at Fred Segal on Melrose. Fred Segal has always been a hot spot for celeb sightings and the newest trends. Now it can add safe gluten-free dining to the list.

Just take a look at that menu! I honestly had to ask what half of the pasta options were because it has been so long since I even looked at the pasta options on an Italian menu.

What is even better than all the GF pasta options is that they take great precautions to avoid cross contamination. Gluten-free pasta is made to order in separate pots with fresh water! How refreshing is that! They really get it, which makes me appreciate them even more.

They use a brand of gluten-free non-GMO pasta straight from Italy called Farmo. It is made from corn and rice flour and it is delicious!

OK, onto the meal! I started with a very refreshing mint, cucumber lemonade.

Next, since we both were ordering gluten-free dishes they brought out some olives instead of bread! Hell Yeah! Just because we can’t snack on bread doesn’t mean we should be left out of the pre-meal snacking! These olives were super tasty and I love that they had something already in place to substitute for bread.

We decided to share our meals to get a chance to try a bit more. For a pasta dish we went with the Penne Arrabbiata. It was penne with a spicy tomato sauce with some perfectly cooked tiger shrimp. It was the perfect combination of traditional pasta with an extra kick of spice and flavor. I absolutely loved it and the pasta was incredible. I had to double check to make sure it was gluten-free because it tasted too good to be true!

We also split the Quinoa Salad that had spinach, cucumbers, peas, tomatoes, avocado, quinoa and balsamic vinaigrette. This was the perfect fresh summer salad. It was really light but filling at the same time.

Everything was so delicious and I can’t wait to go back and try some more off the menu. Next time I think I might need to try the Rigatoni Primavera or the Spaghetti Aglio Olio, or maybe the Penne Con Porcini. Ahh so many delicious choices.

This time I sat out on the patio, it was nice and cool, but I think next time I want to have a seat inside. Its super cute in there as well!

There is also a small cafe in the back, or in the front depending on where you parked. I didn’t see any gluten-free pastries but there were plenty of coffees and tea to choose from. Maybe next time I go they will also have some gluten-free sugary treats!IMG_6204

Gluten Free Garlic Bread

I didn’t get the Italian looks, but I did get my love of garlic from my Italian grandfather. Garlic bread is one of my favorite foods and being on a gluten-free diet really limits my garlic bread intake.

Well, if you remember the goodies I got inside my Send Me Gluten-Free Box last week, you might remember the bread mix. There was a bag of Sevierly Good Gluten-Free bread mix inside.  I decided to use it to make some garlic bread.

For this recipe I used…

1 bag of Sevierly Good Bread mix
3 eggs
1 1/2 cups warm water
1/4 cup olive oil
1/2 cup earth balance butter
4 cloves of garlic
thyme
basil
salt and pepper

Don’t forget the GoVeggie Parmesan Cheese 🙂

All you have to do is mix up the Sevierly Good bread mix with the yeast packet, eggs, water and oil. Mix for about 2 minutes then let it rise for 20-30 minutes.

While the bread is rising mix up your garlic butter. Melt 1/2 a cup of earth balance, add 4 cloves of garlic (feel free to lighten up here if you prefer, but it still turned out pretty great, I might add a 5th next time). I added about a table spoon of thyme and basil to the mixture. I also added about a 1/2 a teaspoon of fresh thyme leaves.

When your bread is done rising you can grab balls of dough in various sizes and dip them into the butter. Then just plop them in to your pan (I used  a 9X5 bread pan).

When everything is inside, pre-heat the oven to 400 and  give it 15-20 more minutes to rise before putting into the oven. When its ready, sprinkle on some of the Go Veggie Parmesan cheese and bake for 30-40 minutes. It will be nice and brown on the top but cooked throughout. You can give it the knife test just to be sure.

Enjoy! I ate a ton of this right out of the pan and then again for dinner with some spaghetti and sauce. I would also recommend dipping it in pesto or olive oil as an appetizer.

I highly recommend you give this a try! Its actually really easy and the Sevierly Bread mix was incredible! I will be using that more often! I’m so happy Send Me Gluten Free decided to toss that in the box!

So Delicious Breakfast

I have always been a big fan of So Delicious ice-cream and was so excited to get to try the new So Delicious yogurt!

There is not a lot of good dairy-free yogurt out there and I knew if someone was gonna get it right it would be SoDelicious.

They have 5 flavors to choose from. All of which are absolutely delicious. However if I had to pick my favorite it would be a tie between the Chocolate and the Blueberry flavors. They are pretty perfect for on the go breakfast. I would toss them in my purse and either eat it after yoga or when I got to my office.

I’ve also mastered the art of eating and driving so as long as I had a spoon handy I was all set!

You may also remember my delicious peach cobbler recipe where I used the vanilla flavored yogurt! It was great for baking and added a (so) delicious creaminess to it.

SoDelicious also has a new dairy-free creamer available. I’m not a huge coffee drinker, so I left the creamers at my office for my co-workers to enjoy and for the occasional day where I am in desperate need of a pick me up.

I am fortunate enough to work in an office full of food conscious people. Some vegetarians, vegans, and me. Well they were very appreciative of the creamer because they could not buy a coffee downstairs at Starbucks and use the So Delicious creamer instead of the nasty soy stuff Starbucks carries.

If you are a coffee drinker you gotta try the vanilla flavor! I’ve had it a few times and it makes me want to drink more coffee just so I can taste it! Its great in hot and iced coffee so its a win-win!

Fruity Pebbles

I recently went to a dinner with some friends and someone said that they wouldn’t know how to feed someone on a gluten-free diet. That was followed by the joke, “Fruity Pebbles for breakfast, lunch, and dinner!”

Me assuming that I can never eat anything that is tasty and delicious said, “Except I can’t eat that.” My friend then said it says gluten-free right on the box. He reads the back of the cereal box every day so he knows he saw it.

Well its true folks! Many of you probably already know this, but I was so excited to find out. If anyone else can share the pure joy I experienced pouring my first gigantic bowl of fruity pebbles in years then this post is totally worth it.

Well it gets better not only are Fruity Pebbles gluten-free, so are Coco Pebbles!

So, since its Friday, I give you permission to grab a box of Pebbles (fruity or coco you pick) and feel like a kid again. I hear there is some good reading on the back of the box too!

Also, this means some fruity pebble and coco pebble treats are a must have summer snack. Kids are back to school so send them with some gooey delicious marshmallow pebble treats!

Just grab some Kraft Foods marshmallows, and some Earth Balance butter and you can make yourself something tasty!

6 cups marshmallows 1/4 cup butter and 1 box of pebbles

melt, mix, press, eat.

Pesto Zucchini Pasta

Some friends invited me to go see the LA Philharmonic at the Hollywood Bowl last week and I was super excited have a relaxing night under the stars with a picnic and wine. I also knew I would be a in a really big hurry after work so I needed something fresh and easy to make. I had a bunch of zucchini left over from a dinner I made earlier in the week so I figured I would give the whole zucchini pasta thing a try.

I have a spiralizer that has been a major fail in the past when I tried to make eggplant chips, but I was willing to give it another try.

For this recipes I used…

2 medium sized zucchini 1 cup fresh tomatoes 3 tbs basil pesto 1 clove garlic 1/4 cup sun dried tomatoes 1/2 cup almonds 1 tbs Go Veggie Parm

The fun part is when the spiralizer starts to work! Go ahead and spiralize your two zucchini.

I made a mess, but everything stayed together pretty well.

When you are done with the zucchini toss it into a pot and boil for 10 minutes just like it were real pasta.

While your pasta is boiling, add your garlic, pesto, and sun dried tomatoes to a bowl.

After you drain the zucchini toss it into the bowl with your pest mixture. Make sure to drain all the water out. I have made the mistake of leaving some in and it gets all runny and gross. So drain it good!

After everything is all mixed together, you can add your dairy free cheese.

Next toss in your almonds and fresh tomatoes and you are ready to enjoy!

This is really great warm as soon as you are done cooking it, but I think it is best when served cold. Put it in the fridge and wait about 30 minutes if you have the time or if you are able to wait a few minutes before eating.

This was a great success and everyone enjoyed it. I thankfully had a bit left over to take for lunch the next day and it was so good. Perfect refreshing salad for a warm summer day!

I did make another bath of this yesterday, but I was feeding way more people so I cooked up some angel hair pasta and added it to the mixture. This too was really really delicious! Either way works!

Freshology

You might remember me giving you all the details on Freshology a few weeks ago. If you don’t remember, Freshology is a meal delivery program that offers gluten-free meals. For all the nitty gritty, you can read more about it here.

I was lucky enough to get to try a few days, so I was sure to document the whole thing!

If you are local to southern California, they deliver daily before 6am. All you have to do is roll out of bed and bam your entire days worth of food is waiting for  you in a cute little cooler.

Each meal is freshly made and individually packaged. (BTW I totally saved a bunch of the containers to use for lunches and storage!)

They give you the menu for the day, but if you have anything different due to diet restrictions, the specific ingredients and meal descriptions are marked on the actual container.

IMG_6147It is super easy to figure out since they have a snowflake -vs- fire code for heating. You can heat things up in the microwave, stove top or oven. Its pretty impossible to mess up.

Here is what I got to enjoy!

 

Breakfast Day 1:Asparagus and Gruyere Scramble with a citrus salad. Typically this comes with sausage, but they subbed in extra eggs instead. The biggest thing that stood out for me with this one was how fresh and juicy the fruit was. Usually if you have packaged  fruit it gets kinda soggy and just doesn’t seem fresh. Nope, this was incredible, as if I had peeled it myself! The eggs were awesome as well! Full of flavor and really filling.

Lunch Day 1: Lunch was a delicious ahi tuna salad. I haven’t had much fish in a while so this was a happy surprise. It was perfect! I don’t know how they manage to make things so fresh and delicious and still manage to make it look so pretty! This salad was really really great, but it wasn’t as filling as I would have hoped. But thats totally fine because I just ate my snack with my lunch!

Snack Day 1: My snack was a pesto and pine nut risotto. So yummy! I loved having a real snack of substance instead of some flavored nuts or chips. This was super tasty and hit the spot.

Dinner Day 1: I LOVE portobello mushrooms!  This was  super yummy! The sauce was great on the eggplant, beans and mushroom. For a meal completely made out of veggies I was super full! But that doesn’t mean I didn’t make room for some dessert!

Dessert Day 1: Oh. My. God! This cheesecake was incredible. I have not been eating dairy, but made an exception when I decided to try out Freshology. Wow, this was so good. I think I spent like 30 minutes taking tiny little bites and savoring every little bit.

So thats was day 1! Great success. I was really excited for the next day. Its like a little Christmas surprise not knowing what you are going to eat. But even better because you don’t have to prep anything or do any grocery shopping!

Breakfast Day2: Ok. This was just unreal. Super fresh berries, pancakes and a vanilla ricotta cheese. I don’t really know where to begin! Writing about it right now makes me crave more ASAP!  Even the pancakes were incredible for just popping them in the microwave for a couple minutes.

Snack Day 2: Caprese Salad!!! This used to be my all time favorite type of salad before I limited dairy so it was a nice trip down memory lane. But what was even better than having some fresh mozzarella was the balsamic reduction! Oh I think I dipped every individual tomato and piece of cheese into it! Mmmm really fresh and really tasty.

Can we also just take a second to look at how cute everything is! Its all packaged so beautifully! Its like brown bagging it the classy way.

Lunch Day 2: This was really delicious! The rice and everything were perfectly cooked! It was a particularly hot day in SoCal and this was really refreshing and light. I loved it! It also came with some curried pineapple. I’m pretty sure I was supposed to put it on top but while I was heating this up I made the mistake of tasting it and just at the whole thing on its own. Probably would have been a great combination, but both were great on their own!

Dinner Day 2: What a way to end my Freshology tease! This fish was cooked perfectly, the lemon sauce was melt in your mouth delicious and it was the perfect finishing touch to the rice, mushrooms, spinach and fish. This was actually so much food that I saved a little bit for lunch the next day. I did have to save room for dessert again after all!

Dessert Day 2: A tasty lemon cupcake! mmmmm this was another one that I took tiny bites of to savor. I actually ate half of it for breakfast with my tea the next day! Perfect ending to my introduction to Freshology.

So overall I have to say this was one of the best meal delivery programs I have tried. I would absolutely do it again and I highly recommend this to anyone who has a super busy schedule and needs some help getting healthy and fresh food without the hassle.

For convenience of it would have to give it a 10 out of 10. It was so easy, everything was labeled and explained and there was no defrosting of a frozen meal or prep required. Plus you get super handy packaging that can be recycled and used again to bring snacks to dinner parties or book clubs.

For taste I would give it another 10 out of 10. You can really taste how fresh everything is. Nothing tasted the same, it was all unique and there were so many different types of food available that you will never get board!

For the quantity of food 10 out of 10 again! People often feel that meal delivery programs are often way too much food and then things go to waste, or not enough and you are starving. Well, this was a perfect combination. Each day was a bit different, but both left me perfectly satisfied.

My only somewhat negative would be a personal one that would not affect everyone. For me that is that it was way more dairy that I have had in my diet for a long time, so the two days of bumping up the dairy intake did weigh me down a bit. It didn’t make me sick, but I could recognize the difference in my body. Again, thats just me. I’d still try it again, but maybe next time ask for less dairy.

Gluten-Free Peach Cobbler

I was recently invited to dinner with some friends. This is always a bit anxiety causing as I need to make sure there are things I can eat, and at the same time I don’t want to be obnoxious about it. Its a delicate balance. It usually works out wonderfully, but dessert is always tricky. A lot of times friends will snag some gluten-free cookies so I at least have something, which is awesome. What is even better is when they ask me to bring dessert!

When I being dessert I not only get to safely eat it, but I also get a chance to share some gluten-free goodies with friends. Thats what I did this past weekend! They asked me to bring dessert and I knew immediately I wanted to make some peach cobbler!

I had not made cobbler since going gluten-free so I thought it was the perfect opportunity to use some Bella Gluten Free flour. This flour is a great cup for cup substitute for regular all purpose flour with great flavor and texture. I also decided to get a bit creative and try to add some of the So Delicious yogurt to create a creamier cobbler.

Ingredients…

Fruit Filling
2-3 cups peaches
1/4 cup sugar
1 container SoDelicious vanilla yogurt

Batter
1 cup GF flour
1tsp xantham gum
1/2 cup butter
1 cup sugar
1 egg
1 tbs vanilla
1 1/4 tsp baking powder
1 tsp cinnamon

Peach cobbler is super easy to make! Start by either peeling and slicing your peaches or just slicing them. I prefer to leave the skin on, just because I think it is more colorful!

Next, your sugar and yogurt to a bowl and mix together, when it is mixed throughout go ahead and fold the peaches in the mix. You don’t want to squish all the peaches. This is really important if your peaches are really really ripe. You don’t want to get rock hard peaches for this, but you also don’t want them so ripe that the slices hardly hold shape.

Once you have the peaches ready go ahead and scoop it out onto the bottom of your baking dish, I used ramekins because I think they are cute, but you could totally use a square 9X9 baking pan as well.

To mix up the cobbler, start with your butter and sugar. Once this is mixed together then you can add the rest of your ingredients. Make sure everything is mixed completely, then scoop it out and plop it on top of the peaches. The great thing about cobblers is that you don’t have to worry to much about where the batter goes. It all melts down and cooks into all the nooks and crannies it is supposed to!

Once you are ready go ahead and bake at 350 for about 15-20 minutes. Keep an eye on them after the 15 minutes mark, you want the cobbler to be cooked throughout and a nice light brown.

So there you have it! My So Delicious yogurt experiment worked out great and the Bella Gluten-Free flour didn’t let me down! This was a big hit and all the gluten-eaters at dinner absolutely loved it! They even asked to keep the left-overs! Give it a try and let me know what you think!
